Ingredients

  • ·1.5 lb crappie fillets
  • ·1/2 cup butter
  • ·1/2 cup flour
  • ·1 onion, diced
  • ·1 bell pepper, diced
  • ·2 ribs celery, diced
  • ·3 cloves garlic, minced
  • ·2 cups seafood stock
  • ·2 tbsp Cajun seasoning
  • ·Green onions and cooked rice to serve

Method

  1. 1Melt butter, whisk in flour, and cook a peanut-butter-colored roux, stirring constantly.
  2. 2Add the trinity (onion, pepper, celery) and cook until soft.
  3. 3Stir in garlic, then slowly add stock and seasoning; simmer 20 minutes.
  4. 4Add crappie and simmer gently 8-10 minutes until it flakes.
  5. 5Serve over rice, topped with green onions.
