Ingredients
- ·1.5 lb crappie fillets
- ·1/2 cup butter
- ·1/2 cup flour
- ·1 onion, diced
- ·1 bell pepper, diced
- ·2 ribs celery, diced
- ·3 cloves garlic, minced
- ·2 cups seafood stock
- ·2 tbsp Cajun seasoning
- ·Green onions and cooked rice to serve
Method
- 1Melt butter, whisk in flour, and cook a peanut-butter-colored roux, stirring constantly.
- 2Add the trinity (onion, pepper, celery) and cook until soft.
- 3Stir in garlic, then slowly add stock and seasoning; simmer 20 minutes.
- 4Add crappie and simmer gently 8-10 minutes until it flakes.
- 5Serve over rice, topped with green onions.
